El aceite de Argán se utiliza culinariamente como un aceite más, bien para cocinar o bien para decorar en general. 
Contiene 80% de ácidos grasos insaturados del tipo oléico y linoléico, también llamado esencial porque no puede ser sintetizado por el organismo y debe ser aportado por la alimentación.
Aceite de Argán y colesterol

El aceite de Argán es particularmente interesante para la regulación del colesterol por su contenido en ácido oléico.
Los estudios demuestran que 2 cucharas de sopa diaria de aceite de Argán durante un mes puede reducir considerablemente el nivel de colesterol sanguíneo.
El aceite de Argán es rico en tocoferoles (620 mg/kg en el aceite de Argán contra 320 mg/ kg en el aciete de oliva) teniendo una actividad vitamínica E. Esta vitamina es un poderoso antioxidante que captura los radicales libres y neutraliza la oxidación destructiva.
